Wedding catering requires someone that is going to care and put just as much love and passion into your special day as you do, which is what I can do for you.

With my professional team of friendly staff. We can make your day a memorable one.

I am a qualified chef and have worked in many five star establishments, The Park Hyatt, Ramada Renaissance in Sydney and our very own Anchorage Port Stephens when first arriving in Port Stephens 22 years ago.

With the experience behind me and many weddings catered for, you can be ensured your event will run smoothly.

We can start with arranging an appointment to meet, where I can either come to you locally or arrange to meet at a venue of your choice.

I can design a menu that is going to suit you and your Budget and run through all the fine details of your special day.

I also provide staff for you, I believe that it is not just the food that makes your event, great staff will add to it.

(This option is at an additional cost of $33.00 per hour)

BRAISED LEEK and BACON  WITH SOUR CREAM and CARRAWAY

 Served with Lebanese crisp breads

SPICED FRIED WHITING FILLETS

Served with a saffron infused mayonnaise and dusted with a lime salt

FOLLOWED BY FEASTING

Entree and Main Course

On platters and bowls in the centre of table for guests to help themselves

CUMMIN SPICED SUGAR ROASTED PUMPKIN SALAD

Tossed with Baby spinach leaves and cumin spiced butternut pumpkin, topped with roasted capsicum and Haloumi

            BBQ MARINATED PRAWNS WITH CHORIZO

Tossed in a lemon butter

ROASTED CORN and AVOCADO SALSA

Tossed in olive oil and lime served with a selection garlic dipping breads

MAIN COURSE

ROASTED LAMB and ROSEMARY

Sliced and placed on platters in centre of table marinated in lemon, garlic, seeded mustard and rosemary served in a light jus

CHICKEN and PANCETTA

Seared on the BBQ tossed in a sage butter

PLATTERS OF MARINATED EGGPLANT

Roasted Quarters of marinated eggplant, served with a fresh tomato dressing and Yoghurt

SMASHED POTATOES

Tossed with garlic, rosemary salt and olive oil roasted in the oven till crisp

FRESH TOMATO SALAD

Tossed with crunchy garlic croutons, fresh torn basil  leaves and a lemon oil topped with Persian feta

SPICED RICE

Spiced mixed brown rice salad tossed with roasted sweet potato, parsnip, Spanish onion with raisins and almonds
